The Sauternes Cask Matured is our eighth release of Ballechin, and has been matured solely in first fill Sauternes Wine Hogsheads. The result is a smooth, subtle sweetness interlaced with deep smoke.
The barley used is peated to not less than 50 phenol parts per million.
The name Ballechin comes from a long closed farm distillery near Edradour which produced a peated malt. Ballechin is maturing in a variety of woods, and is bottled under the Discovery Series label. Initial releases have now sold out.
This eighth release is the final release under the Discovery Series. Bottled in 2013. There were a total of 6000 bottles produced. Limited stocks remain.
